Sodium bicarbonate is commonly known as baking soda. Sodium bicarbonate is produced industrially from sodium carbonate. It is produced on the scale of about 100,000 tonnes/year (as of 2001). Commercial quantities of baking soda are also produced by a similar method: soda ash, mined in the form of the ore trona, is dissolved in water and treated with carbon dioxide. Sodium bicarbonate precipitates as a solid from this solution. Regarding the Solvay process, bulk sodium bicarbonate is an intermediate in the reaction of sodium chloride, ammonia, and carbon dioxide. The product however shows low purity (75%).

Although of no practical value, NaHCO3 may be obtained by the reaction of carbon dioxide with an aqueous solution of sodium hydroxide: Soda ash is dissolved in a rotary dissolver and the soda ash solution is filtered to remove any nonsoluble materials and is then pumped through a feed tank to the top of a carbonating tower. Purified carbon dioxide is introduced into the bottom of the tower and held under pressure. As the saturated sodium solution moves through the tower, it cools and reacts with the carbon dioxide to form sodium bicarbonate crystals. These crystals are collected at the bottom of the tower and transferred to centrifuge, where excess solution (filtrate) is filtered out. The crystals are then washed in a bicarbonate solution, forming a cake-like substance ready for drying. The filtrate that is removed from the centrifuge is recycled to the rotary dissolver, where it is used to saturate more soda ash crystal.

The washed filter cake is then dried on either a continuous belt conveyor or in a vertical tube drier called a flash dryer. Next, the dried crystals of sodium bicarbonate are separated into various grades by particle size. Standard grades of sodium bicarbonate and special grades are manufactured to meet customers’ specific requirements, and particle size is the major determinant of grades. Powdered type 1 and fine granular type 2 have a wide range of uses in foods, chemicals, and pharmaceuticals. Granular grades type 4 and type 5 are found in foods and doughnuts, cleaning compounds, pharmaceuticals, and many other products. Industrial grade sodium bicarbonate is used in diverse applications, including oil well drilling fluids, fire extinguishing materials, and water treatment. Each grade goes to a holding bin wherein atmosphere, carbon dioxide, and moisture content are controlled to “cure” the product. Once cured, the grades are ready to be packaged and transported. In cooking, baking soda is primarily used in baking as a leavening agent. When it reacts with acid, carbon dioxide is released, which causes expansion of the batter and forms the characteristic texture and grain in pancakes, cakes, quick breads, soda bread, and other baked and fried foods.

Bicarbonate of soda or baking soda has many different uses in the household. Although much more expensive products have been developed over the years to do the same jobs, baking soda can work for you just as well, if not better. Use it in the following ways:

  1. To make your own baking powder, stir and sift together 2 parts of Cream of Tartar to 1 part baking soda and 1 part cornstarch.
  2. Be sure to keep an extra box of baking soda by your stove in case of grease or electrical fire. Scatter the powder by the handful to safely put it out.
  3. Keep a container of baking soda in your garage as well as in your car to put out a fire. It won’t damage anything it touches.
  4. Baking soda will also put out fires in clothing, fuel, wood, upholstery and rugs.
  5. Clean vegetables and fruit with baking soda. Sprinkle in water, soak and rise the produce.
  6. Wash garbage cans with baking soda.
  7. Soak and wash diapers with baking soda
